其實有一排我自己真係有cupcake熱,整左好多好多~~而家決定放晒佢地上黎同大家分享。雖然好鐘意,但自問唔係一個整蛋糕叻嘅人,所以成日都好欣賞有一對巧手可以整靚靚蛋糕嘅人~~ 一遇到cupcake我就好開心,因為佢flexible好多,味道好容易控制,裝飾自由度又大~ 知道香港多左地方有cupcake賣,咁而家唔駛出街買啦,大家都可以係屋企試下啦~~

Lemon cupcake with Cream Cheese Frosting

(A) Cream Cheese Frosting::

– 300g Cream Cheese

– 1個  檸檬

– 3~4湯匙 Icing Sugar (糖霜)

做法:

1. 用打蛋器把Cream Cheese打至軟身,加入檸檬皮屑和檸檬汁。最後把糖加上,拌勻。完成!

(B) Lemon cupcake::

– 125g 無鹽牛油(室溫軟化)

– 125g Caster sugar (幼糖)

– 2隻  雞蛋

– 1個  檸檬

– 125g 自發麵粉

做法:

1. 預熱焗爐至190 C/ 375 F。

2. 軟化牛油和糖用打蛋器打勻至淡黃色。加蛋、檸檬皮屑和檸檬汁,拌勻。

3. 加入已篩麵粉,拌勻。

4. 焗盤放上紙模,再倒入粉漿,放入焗爐焗大約15分鐘。

5. 焗好後,取出待涼。

6. 把已準備好的frosting放上已涼的小蛋糕上。稍作裝飾,即成!
